Neil Robertson’s bakery Crumble & Flake has found its Capitol Hill home. In a search he announced via CHS in October, the pastry chef says he has settled on a space for his croissants and macarons:
The truth can now be told – the lease on the future home of Crumble & Flake Patisserie is final!
Address: 1500 E Olive Way, Seattle WA 98122
Currently the space is a hair salon (for the past 20+ years). Right next door to the in-progress Rachel’s Ginger Beer and Montana. Just around the corner from La Bête.
As predicted, the shop is tiny – just shy of 500 square feet. I’ll be working with Henry H. Lo, architect at Stillwell Hanson Architects –http://www.stillwellhansonarchitects.com/ – on designs for the build-out, and I hope to be open sometime in April (though we all know how these things go).
Plans are to offer a selection of breakfast pastries both sweet and savory such as croissants, kouign amann, and scones, alongside dessert pastries like filled-to-order cream puffs, macarons, cookies and brownies. Expect a few surprising flavors and seasonal ingredients was well as classic favorites. Coffee will be provided by True North Coffee Roasters – http://www.drinktruenorth.com/
