Fruit or veggie required in new lunch rules for Seattle Public Schools

The new school year will bring new menus — and healthier options — to King County’s public schools. In Seattle, kids have already been “enjoying” school menus with a greater focus on whole grains, lower fat and lower salt foods, no trans fat and fresh fruit and vegetables. But grant funds have also helped the district to push the kid culinary envelope beyond typical cafeteria fare:

Seattle Public Schools has been working with the Tom Douglas Group to develop new kid-tested menu concepts. They have held family events to taste test menu items, including: Butternut squash curry and chicken with couscous; baked pollack (white fish with tomato topping); cheese enchiladas with homemade chili sauce; chicken and vegetables with noodles and cherry blossom sauce; tabouli salad, fresh greens and focaccia bread; and yogurt fruit parfait.

The Tom Douglas Group posted about its work here to develop tasty menu items that fit the district’s $1.10 per meal budget and scale to more than 19,000 lunches daily.

The new federal requirements are outlined below.

A budget of $1.10 per meal? That’s all we’re willing to spend feeding children? What is wrong with people?

There was so much salt in those pizzas that I got a huge head ache every time without fail from the dehydration they caused. Good riddance.
