Stateside’s take on French Vietnam by way of Capitol Hill joins the mix in Melrose

When CHS stopped by former Rookie of the Year Mamnoon (now growing into Melrose MVP status), the street in front of the new-era Middle Eastern restaurant was torn to hell as a City of Seattle crew installed a new gas line for a new restaurant around the corner that will likely be the next bright young superstar to emerge at the bottom of Capitol Hill.

Stateside has its utilities — with help from the mayor *and* the governor — and is ready for its debut on Pike with a soft opening this Thanksgiving weekend. Bring your opening weekend patience and prepare for a trip to Viêt-Nam.

CHS first broke the news on the French-Vietnamese venture from first-time Seattle restauranteur Eric Johnson in April:

We couldn’t be more pleased — just serendipity that we got it,” Johnson tells CHS about the 2,400 square-foot restaurant space being built where offices and parking used to be hidden away in the old building behind the McMennamins tavern. “We really, really wanted an old building. Now we’re going to have to live up to the best concentration of restaurants in Seattle.”

The food?

Chef Eric Johnson’s resume is…pretty damn impressive. He worked for Daniel Boulud in New York before opening restaurants for Jean-Georges Vongerichten in Paris and Shanghai. Having lived in two countries that exerted no small influence over the food of Vietnam, he’s readying a mix of faithfully executed Vietnamese staples and dishes that take some French and Chinese liberties.

Handling the front of the house is Stateside partner Seth Hammond, formerly of Lisa Dupar Catering. Behind the bar, you’ll find George Engelstad, formerly at the Hideout.

They join neighbors already creating a solid food and drink destination at the base of Capitol Hill and expanding the idea of Melrose beyond the Melrose Market. They’ll soon have more company. The massive project to create the Starbucks Reserve Roastery in the former art store and Volvo dealership at the corner of Pike and Melrose will open in early December along with a new Serious Pie from serial big project restauranteur Tom Douglas.

Nom, nom! Tried a few dishes at Stateside tonight and the food was incredible. The short rib melts in your mouth. The daikon and cucumber salad was very refreshing. My partner and I also shared the parfait for dessert and we both commented how it was the best we’ve had in recent memory. If you get Lana as a waitress – she has a French accent – you will have great customer service. This restaurant will do well with all the other amazing restaurants in the Melrose Triangle. Welcome to the neighborhood!
