If you want to get intimate with your whiskey — right down to the molecular structure — master distiller Justin Stiefel and the latest new outpost of the Heritage Distilling family is for you.

The new Capitol Hill tasting room opened during Block Party. While the overlap in alcohol preference between the event’s average attendees and Heritage’s targeted customer base may not have a large amount of shared space, it was still an exciting weekend for the new venue.

Heritage won’t be firing up its microdistillery licensed for the site — for now. For the time being, production at the Ballard location is robust enough to cover Capitol Hill’s needs. And because it is within a 10-mile radius, Heritage can operate within the state’s microdistillery production and sales rules.

The Gig Harbor-based company’s recent expansions have included Capitol Hill, Ballard, and… Royslyn.

In 2016, Heritage owner and master distiller Stiefel told CHS the project will be “doing everything you would expect distillery to do – distillation in site, barrel aging, blending. Flavoring and bottling,” and joining Sun Liquor and OOLA as the lone creators of Capitol Hill spirits. In the time since, Sun moved its distilling operations off the Hill.

The new tasting room is not a bar. Instead, visitors are encouraged to stop in for some tastes. Under tasting rules, you get the equivalent of two shots for $10. Those can be distributed across four half shots, or two half shots and a cocktail… or two cocktails. Get creative.

Still coming is a 1,000-square-foot event area but the retail and tasting component of the project is finally ready for business in the Central Agency building on the backside of Pike/Pine. Neighboring fellow building tenants Lark and Slab Sandwiches, Heritage has taken over the space left empty in the preservation-friendly project when Canadian sandwich venture Meat and Bread pulled out of the neighborhood. Also coming are neighborhood collaborations with the likes of nearby Optimism Brewing and others.

Though it isn’t yet operating its local still, the Heritage shop now adds a new stop on your Capitol Hill (and nearby)-created beer and spirits tour including neighboring Optimism, Redhook, Elysian, OOLA, and tiny Outer Planet on 12th Ave.

HDC Capitol Hill is located at 120110th Ave. Hours are Monday through Friday, noon to 8 PM, Saturday 11 AM to 8 PM, and Sunday 11 AM to 7 PM. You can learn more at heritagedistilling.com.
