  • All the logistical uncertainty about a new Bakery Nouveau Capitol Hill can be thrust aside.

“I’m in the space right now working on electrical layout, trying to pick colors,” Nouveau’s William Leaman told CHS Monday afternoon when we called to congratulate him on working out a solution for his planned Capitol Hill home’s shortcomings with DPD.

With a solution for venting the operation in the long-empty retail space of the John Court development in hand, Leaman can now move full speed ahead on creating the second location of his popular West Seattle-born bakery.

Late last year we told you about the Bakery Nouveau love for the 15th Ave location — and uncertainty that Leaman could find solutions to put the huge retail unit to work.

Leaman says the new Nouveau will have “some seating” and will feel very similar to the counter and set-up inside of the West Seattle bakery. The Capitol Hill Nouveau will be creating its own sweets, treats and sandwiches — Leaman told us he’s not interested in a business that revolves around trucking creations around the city.

The sandwiches, he hopes, will be a big deal for this area of the Hill near hundreds of Group Health workers and a growing 15th Ave food and drink economy. “Four star dining between two slices of bread,” he likes to say. We’ll buy that.

Meanwhile, Leaman is still sorting out colors, an element he likes to start with when creating a new space. “In terms of color pallette, we’re looking at warm color — milk chocolate and cream. Those are things I like to eat,” Leaman said. To follow, CHS has begun painting our office in various shades of Dorito.

Leaman says you’ll see him at the new Capitol Hill location frequently. He’ll also have right-hand lead pastry chef Audrey Hollis on point for his Hill venture. Plans are coming together for a spring debut.

“We’re shooting for close to Easter,” Leaman said. Here’s hoping Bakery Nouveau Capitol Hill can bust out a mean egg salad sandwich.

$1900 for Kitchen & Furniture? I know the space is tiny but that is a really small amount for Kitchen Equipment.
