The plan for the crew at 15th Ave E’s Liberty to open a second Capitol Hill bastion on the other side of the neighborhood isn’t necessarily part of a scheme for total Capitol Hill domination. But it could be the first in a series of creating new, Liberty-inspired spaces across Capitol Hill.
“We’re a couple neighborhood guys,” Liberty partner Keith Waldbauer tells CHS. “We love it. We hope to spread this out.”
Waldbauer said the in-the-works sister to Liberty being planned to join the burgeoning scene on E Olive Way will hopefully be the second in what will be a family of neighborhood bars in various corners of Capitol Hill.
“This is our neighborhood — we want to be here,” Waldbauer said.
He and Liberty founder Andrew Friedman plan to sort out spaces for the Liberty family to fit together and complement each other with the same basic recipe of a comfortable neighborhood bar, surprisingly sincere craft cocktails efforts, unexpectedly excellent food and, perhaps most importantly, couches.
“Even though it’s not the most cost effective way to go about it, we love couches,” Waldbauer said.
You’ll find that recipe, couches and all, when the new Liberty venture opens — but you probably have a little bit of a wait. Waldbauer says the project is still in the midst of securing permits and will require seismic work and structural upgrades to make sure the pre-school facility above the former Online Cafe has a good neighbor in the new bar.
Waldbauer said he also feels a responsibility to provide a daytime cafe service following Online’s closure so expect the new place to also be plenty active in daylight hours as a coffee hangout and lunch spot.
As for what it will be called, Waldbauer said he and Friedman are down to two or three options and are “crowd sourcing” the contenders with Liberty regulars.
Despite a barroom’s worth of somewhat cheesy plays on Liberty to choose from, you should probably expect to be surprised when the name is finally revealed.
“Everyone wants to give it that ‘And justice for all’ thing,” Waldbauer said, clearly disapproving.
Capitol Hill food+drink notes
- CHS has had more than a few people ask us if this place — La Cocina Oaxaquena— is the same as this place — Mezcaleria Oaxaca Capitol Hill. Nope. They’re different. But there are some ties that bind.
- Still not open: Tavern Law sibling The Old Sage. The food and drink vets of McCracken and Tough had predicted an early spring opening. We don’t usually like to make too big a deal about slipped dates because, as we’ve written before, opening new things is really, really hard. But we’re curious to know more about what’s going on with this project helmed by a veteran Seattle team.
