Tis the season to begin thinking about your coming holiday air travel. By this time next year, you’ll be able to stop by a little bit of “Capitol Hill” on your way out of Sea-Tac.

The Capitol Hill Food Hall is slated to open by June 2019 as part of a massive overhaul of the busy Port of Seattle facility.

“Travelers to SEA are invited to immerse themselves in a bustling urban foodie market featuring some of the Seattle region’s best plates, drinks and gourmet food products,” the port promises. 

There will also be shopping: “In the general store area, travelers can find locally made candy, chocolates, handmade cheese, coffee, tea, jams and honey—perfect for giving a taste of the beautiful Pacific Northwest region to friends and family back home.”

The roster of businesses set to fill the new hall might surprise locals. The Capitol Hill Food Hall is slated to debut with “gourmet sandwiches and baked goods” from Macrina Bakery, “artisan juices, smoothies and salad bowls” from something called Jujubeet, Salt & Straw “artisan ice cream,” and, “locally roasted” Slate Coffee.

“Burgers, hot dogs, flatbreads as well as craft beers on tap from local craft breweries will also be available,” the Port says.

While the roster of participating businesses in the coming Capitol Hill Food Hall might be a little underwhelming, the efforts to invest in the booming airport’s even more booming food, drink, and retail opportunities has opened up several opportunities for Hill-related brands.

Monica Dimas of Neon Taco, Tortas Condesa, and Westman’s Bagels is set to open a Sunset Fried Chicken at Sea-Tac’s Concourse D. Her Sunset location inside 12th Ave’s Rachel’s Ginger Beer, by the way, is moving out to make way for the return of Ma’ono Fried Chicken to Capitol Hill. “We appreciate the emphasis the Port places on partnership and championing the local, women- and minority-owned firms in our region,” Dimas said in the Port’s announcement.

Sea-Tac is also including new projects from the Central District’s Broadcast Coffee, Li’l Woody’s, and Skillet.

Also coming soon to Sea-Tac is Elliott Bay Book Co. We talked with manager Tracy Taylor about the addition earlier this year. The new store slated to open in 2019 will have the Elliott Bay name and will “resemble our store design and selection,” Taylor said, including staff recommendations, EBBC bestsellers, local author selections, and more. When it opens, you’ll find the new book shop on Concourse C.
