Miss Little Uncle? Chef Wiley Frank is back in kitchen at Central District’s Standard Brewing

The flavors and spirit of Little Uncle, probably one of the most missed neighborhood food and drink venues to leave us in recent years, are back on the menu with the chef behind the much-missed E Madison restaurant now pairing his work with Central District-crafted beer.

For eight years, the Central District’s Standard Brewing has maintained a far above standard food menu to pair with its S Jackson-made beers. New chef Wiley Frank is continuing that run with some surprises and flavors from the Little Uncle past.

The 25th and Jackson brewer announced the collaboration over the weekend:

If you’ve been in Seattle for a few years, you will remember his previous restaurant, Little Uncle, one of the most missed restaurants in the city. We are thrilled to have him here, where he can collaborate with the edible genius of Pai and Francisco.

Husband and wife team Wiley and PK Frank decided to close Little Uncle in fall of 2019 saying they were ready to move on from the restaurant to new projects. Laotian-flavored Taurus Ox now calls that space home.

Standard Brewing, meanwhile, opened on S Jackson in 2013 with Central District neighbor Justin Gerardy making the step up from homebrewer to award winning microbrewery.

Standard has also had a run of Capitol Hill chef legend buzz in its kitchen. Before Frank, restaurant veteran Jason Stratton of Spinasse and Artusi put his talent to work at Standard on his way to taking on the kitchen at Georgetown Italian joint Mezzanotte owned by Marcus Lalario of Li’l Woody’s and Fat’s Chicken and Waffles.

At Standard, Frank’s new additions and tweaks have added to the menu of tacos and sandwiches at the brewery with specials like house chickpea hummus and flatbread, asparagus tempura, and a little bite of Little Uncle nostalgia in the crispy duck wrap with five-spice broth.
