Capitol Hill’s new Limited Edition Sushi will have nearly unlimited seating from your place to Cal Anderson Park

Portability is part of the deep history of sushi. Saki Tsukasaki’s soon to open Limited Edition Sushi on the edge of Cal Anderson Park will be a celebration of that mobile efficiency with “premium omakase” boxes to go.

After months of watching the Seattle restaurants scene be upended and spun around by the COVID-19 crisis, Tsukasaki hopes Limited Edition will be part of an enduring trend of delivery and takeout demand for meals on Capitol Hill.

The takeout-focused sushi joint will also have pretty amazing “patio” seating options. It is taking over the space formerly home to the Cure charcuterie and cocktail bar on Nagle alongside the western edge of Cal Anderson. For now, Cure lives on inside the Remedium Grill, the Hawaiian and Filipino BBQ restaurant now resident at 15th and Pine.

Tsukasaki says the plan for Limited is to focus on its omakase boxes with plans for private dining options and subscription services down the road. Limited will also have sake options on offer to accompany their boxes.

The restaurant will also be part of what developers hope is a reinvigorated Nagle Place as years of construction on major mixed-use developments stretching along Broadway to Capitol Hill Station are finally complete.

Limited’s owner says she moved from Portland about 8 years ago after growing up in Japan, living on Capitol Hill before settling on Eastlake. But her old hangouts make Limited’s neighborhood a comfortable home for Tsukasaki’s venture.

“Doing business on Capitol Hill is very natural to me,” she said.

It’s not a bad idea actually, I find I order take out from the same handful of restaurants. More and more I’m realizing fancy food at lest, including alcohol, are closer to a license model, where it’s basically the taste you’re buying more than the calories. If you order a single espresso for example, they made two, but then toss the 2nd one since you didn’t buy the license for it essentially.

Looks delicious and can’t wait to try it out! I hope they consider the option of reusable plate/trays or bento boxes. I would be happy to return dishes after eating in Cal Anderson. More restaurants should offer returnable dishware and utensils if most customers are taking it “to go” just a few feet from the restaurant. Maybe even have people put down a small deposit if they’re worried about people not returning things. Trash cans in the city are overflowing with all the waste produced from an increase in takeout and I hope more business work to reduce waste.

Ah, that URL works for me! And indeed I was using the feedburner URL. It was confusing, since the feed still exists but just stopped having content on (apparently) the 13th: http://feeds.feedburner.com/Capitolhillseattle

They are using genuine grated wasabi, not tinted horseradish. I don’t know about now, but back in the day even the best places had fake wasabi. This is as real as it gets. What genius to only sell 20 per night. I ordered one and cannot wait. Sake flight too.

How was the sushi quality?
