Tio Baby’s nachos and wings to take up ‘permanent residency’ at E Olive Way’s Rose Temple Bar

Up and coming chefs hosting pop-ups at your favorite Capitol Hill bar is so pre-pandemic. 2021 is all about permanent residency.

Chef Will Gordon, previously the executive chef at Westward and an alum of How to Cook a Wolf, is taking his Tio Baby’s pop-up to the next level with a long-term, nightly engagement at E Olive Way’s Rose Temple Bar.

“I’m really excited to have the chance to serve some of my favorite foods in one of my favorite bars,” Gordon said in his announcement of the deal to become a nightly part of Rose Temple’s offerings. “Throughout my culinary journey, nachos and wings have been a constant for me.”

“The opportunity to share my own versions is exciting and a little-nerve wracking, in the best possible way,” Gordon said. “I hope people get a chance to eat it, enjoy it, pair it with great Rose Temple drinks and make it a really good night out.”

Tio Baby’s elevated bar chow makes the move to full-time status after a run of successful pop-ups at Rose Temple.

The Rose Temple Bar just marked its two-year anniversary on E Olive Way where it opened in June 2019 in the space left behind by the financial implosion of sandwich and speakeasy joint By the Pound.

The link-up with Gordon fits in a trend of nightlife joints welcoming in long-term roommates to handle the food end of things. Lobster Daddy and Vermillion are once recent example. The new Bagel Bodega from Loxsmith Bagels at Nacho Borracho is another spin on the set-up as bars and clubs look to streamline their businesses amid increasing costs and challenging leases.

Tio Baby’s starts its seven night a week run at Rose Temple at 1801 E Olive Way next Thursday, July 8th. You can learn more via @tiobabys.
