A completely overhauled 15th Ave E restaurant and bar began a new journey last week as Bar Vacilando made its debut.
The new Capitol Hill venue from the Black Bottle family of food and drink takes over after a long period of emptiness for the space formerly home to 22 Doors. Co-owner Chris Linker told CHS earlier this month his intention for Bar Vacilando at 15th and Harrison was not to open a fancy restaurant, but a bar with really nice food. “We want people to feel like they can disarm … let time slow down a little bit,” he told us. “It’s more of an analog restaurant than a hyper-digital restaurant.”
World travel inspired Bar Vacilando’s name and chef Brian Durbin’s menu of “Meat, Seafood, Veggies, Crust, and Sweets” highlighted by offerings like “Slow-cooked Pork Jowl & Tokyo Turnip w Pickled Tops,” “Smoked Paprika Prawns,” “Green Bean Fries,” and a small selection of savory breads with craft cocktails, West Coast beers, plus wine and bubbly to wash it down. Saturday and Sunday brunch is coming.
The new space is bright and white — not Black Bottle here. The much-loved patio, meanwhile, has also undergone an elegant makeover.
Open daily starting at 3 PM, the new 15th Ave E offering joins 15th Ave E’s cluster of food and drink venues and fills in what had been a surprising two-year gap on this busy strip of Capitol Hill.
