A new dessert ‘valley’ at the top of Capitol Hill? Coché Valley Dessert Cafe coming to 15th and Pine

Coché Valley Dessert Cafe, a family-owned cafe serving pastries, crepes, and waffles inspired from Thailand, Japan and Hong Kong is moving in at 15th and Pine.

Bee Puntip Paisan says she brought the idea for Coché Valley to Seattle after working in Thailand as a pastry chef. Two years later, she has now turned her passion for desserts into a Capitol Hill cafe serving Asian sweet treats. Coché Valley Dessert Cafe will be her first venture.

“The idea came to me when I was a pastry Intern during university, where I realized my passion for desserts,” Paisan said. “I wanted to create a place where people could feel happy.”

After graduating in 2019, Paisan moved with her husband to New Orleans, and finally Seattle specifically to start her own line of Asian sweets.

Coché Valley Dessert Bar is set to open this month and will replace bubble tea cafe Bobabucha after Paisan bought the business. They are currently hard at work redesigning the space.

Paisan said her new cafe will offer several homestyle crepes, with flavors from Thailand and Japan, along with Hong Kong-style bubble waffles and Shibuya toast. Paisan said she had a vision of creating desserts that were sturdy and bite-sized. The menu also includes pastries, Korean shaved-ice, and cookies. She also plans to introduce a range of Asian-style drinks including matcha lattes and milk teas.

“We’re hoping to present customers with different styles of desserts, mostly crepes, which would be made Thai-style or Japanese-style,” Paisan said. “I want to create a new experience with this, which makes the desserts look innovative.”

Another new sweet treat project is also underway on Capitol Hill where COMEBUYTEA is working on its new cafe in the former Starbucks space at Broadway and Pike.

Paisan said she enjoyed the vibrancy of Capitol Hill, and wanted to set up a restaurant in a setting which would bring customers from all over the city. She wanted to create a space where people could work as well as enjoy her creations.

“I noticed that Capitol Hill had a lot of young adults and college students, and the location is quite close to schools and colleges,” Paisan said. “I’m hoping to create a space where people can spend time working as well.”

With Coché Valley Dessert Cafe, Paisan said she hopes to introduce people to the treats she loved back in Thailand. She plans to add an aesthetic element to each of her desserts, and source ingredients locally.

“I haven’t seen desserts similar to the ones I enjoyed back at home, especially with the flavors,” Paisan said. “So I’m excited to bring those treats to Capitol Hill, and add my own twist to the menu.”

What I like about Asian desserts is that they are usually not as cloyingly sweet as most N. American desserts are.
