Blustery, drizzly days may not feel like summer, but the owners behind Cantina del Sol announced the new rooftop bar will open this week above E Pine and revealed some intriguing new plans including “a bit of a Capitol Hill comeback story” for the rest of the building.
CHS reported here in March on the plans for Cantina del Sol in the former Mezcaleria Oaxaca complex at E Pine and Summit. The food and drink business family behind Agua Verde, Rumba, Inside Passage, and HoneyHole has now announced the cantina is only part of the plan as a new non-Mexican restaurant and bar will also join the building.
“A separate bar concept and restaurant concept will open on the ground floor and are slated to open summer and early fall, each with familiar ties to Seattle’s restaurant history and a bit of a Capitol Hill comeback story,” they say.
The new projects are the latest on Capitol Hill and in the city for the Pike Street Hospitality Group, the family of food and drink businesses shaped by Travis Rosenthal whose 2006 purchase of classic Capitol Hill date spot Tango with his wife Carrie Rosenthal was the start of creating the growing Seattle food and drink family.
The rooftop Cantina del Sol will be “steeped in creative energy—from hand-painted signage by Ben Hubard of BenBusy to a stairwell mural preserving the previous business’ signs created by celebrated sign artist Sean Barton.” They’re also planning “DJ sets, low-lit Latin soul, cumbia, and balearic grooves drifting across the rooftop.”
As for that neighborhood comeback, plenty of dearly departed favorites come to mind. We’ll have to wait to see which generation of Capitol Hill nostalgia is getting the nod.
