So much soup. To celebrate National Soup Swap Day — started right here in our neighbor neighborhood, the Central District — a group of soup enthusiasts gathered at 11th Ave’s Vermillion Saturday night to tell the tale of their soups and trade delicious-sounding creations with their new friends and neighbors. One thing was clear — this group loved soup. Four hours of onion preparation for the French onion? Dedication. We’ll gather the CHS tribe again soon but we can’t ever guarantee this level of passion again. Start planning for CHS Soup Swap 2013 now.
I’m glad I got to participate. I made some Full Circle Farm beet ginger soup and came away with so much more!
Soupapolousa was fabulous. Great people and great soups to swap. Thanks to everyone who showed up with their wonderful soup creations.

So much fun. Thanks to CHS for organizing, Vermillion for hosting, and everyone else for the soup!
I had a great time and it was fun meeting fellow soup nerds. Meghan, Kyle and myself are already getting together tonight for a little soup eating (borscht and cream of mushroom) and movie watching.
I forgot to tell everyone where I got the recipe in case you want to make it yourself/try a veggie version/tweak it to your liking. It’s an adapted Julia Child recipe (and I caramelized the onions for much longer than this version): http://smittenkitchen.com/2011/04/french-onion-soup/
See you next year!
As always a fun potluck at Vermillion, can’t wait to break into my 6 soups!
I agree, that such a great event. so good in fact, I think we should have another before next year! can we make that happen???
I’d host monthly, preferably on a Sunday early evening if I have some open.
that sounds great!
