Sea Wolf’s new bakery will extend ‘golden age of Capitol Hill bagels’ to Montlake

CHS reported this week on the richness of bagel offerings currently available on Capitol Hill with the opening of a Rubinstein Bagels on 15th Ave E joining Loxsmith, Westman’s, Eltana, and Dingfelder’s to keep the area well-stocked with fresh, crispy, chewy circles.

Those chewy circles, it turns out, will also be the focal point at a new, coming soon bakery project in Montlake.

CHS reported here last year on construction plans for the new project from Sea Wolf Bakers along 24th Ave to take over the space left empty when Capitol Hill gay bar ex pat Purr shuttered.

Sea Wolf’s Jesse Schumann told CHS at the time the 24th Ave location would be an expansion for the company with a new bakery and cafe designed by Heliotrope to achieve the openness and light of the Stone Way original while also continuing the bakery’s dedication to remaining plastic-free, serving items on shelves, baskets, plates, and recyclable to-go boxes.

As Montlake construction is now progressing and moving toward a hoped for opening early next year, Schumann described the new location this week to CHS as “a bakery that produces bagels.”

Bagels have been part of the Sea Wolf offerings since its 2016 debut in Fremont with small, special batches available.

They’re still floating ideas for the name of the new Montlake bakery, Schumann said.

A recent liquor license application lists the project as A Bagel Shoal. The nautical word play seems like a good fit for the Sea Wolf family.

“‘Shoal’ can mean a large number of people or things,” Schumann said. “A bagel shoal would be a large number of bagels.”

Glad Seattle is up to 1997 in food trends. Enough bagels, burgers, teriyaki, and more fast casual healthy food.
