Here’s how Capitol Hill’s Canon added room for more customers — without putting a dent in ‘America’s largest spirit collection’

Canon owner Jamie Boudreau has room for “America’s largest spirit collection at 4,000 labels and counting” but doesn’t always have room for the customers that line up at the 12-year-old 12th Ave cocktail bar. But now Boudreau’s award-winning bar has room for 30 more patrons to enjoy a gimlet or two.

Canon announced it has added a new Copa-Quoin Room to help handle overflow crowds on Wednesdays through Saturday nights.

As the Canon library keeps growing, where did the new space for customers come from? Boudreau says extensive repairs needed to the back deck area began putting the effort in motion four years ago. But then the pandemic hit and Canon had its hands full just staying in business.

As the popular cocktail bar regained its footing, the repair work hit another COVID-era roadblock. “I had to ‘fire’ the contractors doing the work as they just kinda stopped showing up every day/week and the quality of the work and materials was getting worse,” Boudreau tells CHS, “so I completed all the interior/design stuff myself, with the help of a few friends.”

The result is an expanded Canon without sacrificing any of the venue’s valuable shelf space behind the bar.
